Ingredients

  • 1 round brie
  • 4 peaches
  • 1 cup blueberries (or more if you are like me)
  • 1/2 cup nectarine or fruit-flavored balsamic vinegar
  • 1 baguette

Instructions

  1. Remove some of the casing from the brie.
  2. Slice baguette into 1/4 inch slices and mist with avocado or olive oil.
  3. Remove the peach skins and slice the peaches into 8 slices each.
  4. Grill peaches until they are soft and have light tan grill lines.
  5. Place bread slices on the grill and lightly toast each side.
  6. Once peaches are grilled, place the brie into a cast iron or frying pan.
  7. Place the pan over the grill on medium heat.
  8. Add fruit-flavored balsamic vinegar onto the brie (we prefer nectarine or peach).
  9. Once the brie is starting to melt and the balsamic is bubbling slightly, pour blueberries on top.
  10. Cook until the mixture is bubbly and warm.
  11. Dip sliced bread into the brie mixture and enjoy!
